Alternating grooves, or Kullenschliff, in the blade of the knife fill with fats and juices to keep foods from sticking to the blade of the knife. These grooves are on either side of the blade. To forge the blade and tang of the knife, a single billet of the finest German steel alloy is used. The Edge of the blade has a 15° "Elite" edge for maximum sharpness. Forged knives are know to have better balance than stamped knives.
Properly caring for your Messermeister knife is very important, and will give more life to your blades. Maintaining a sharp edge on your blade and keeping food from drying to it can help prevent injury while using your knife. After you are finished with your knives, clean them with warm soapy water, fully dry and safely store them in a blade guard, knife block, or an in-drawer storage tray. Do not wash your knives in the dishwasher or let them soak in water.
