The Wüsthof Santoku Knife is a go to knife for daily meal preparation. Thinner than the blade of a traditional chef’s knife, the edge gently curves up at the very end.
The hollow edge of this Santoku knife has evenly spaced vertical indentations. These indentations on the blade provide small air pockets, which prevent food from sticking to the blade. The forward bolster allows easy sharpening of the entire edge of the blade.
Wüsthof uses Precision Edge Technology (PEtec) that creates a blade that is 20% sharper with twice the edge retention. The knife steel has been hardened to 58? Rockwell, maintaining a sharp edge.
