Adept at chopping, slicing, dicing and mincing, this exceptional multi-purpose knife excels with medium-sized foods of all kinds. This exceptional blade offers a deeper belly curve than a typical chef s knife, affording maximum glide and easy rocking motion for fine mincing of herbs, garlic, and small vegetables. Coupled with a bamboo stand for displaying and storing, this fine knife-and-stand set makes a handsome and useful addition to any kitchen.

The Shun Ken Onion 8 Chef s Knife has a strong VG10 steel core supported by thirty-two layers of Damascus cladding, with sixteen layers of SUS410/SUS431 stainless steel on each side. The Kasumi method of knife-making results in a blade that slices and glides more easily through foods, and leaves a lovely rippled effect along the blade known as suminigashi or ink pattern. This razor-sharp blade provides exceptional edge retention, while the full tang delivers marvelous strength and balance. 

The Shun Ken Onion line features multiple design innovations that reduce strain while working, at the same time providing the ultimate in control. The bolster is angled to extend over the back of the spine, and the handle s curve that matches the arc of your hand s palm. These stunning ergonomics and uncommon beauty combine to encourage a professional pinch grip while cutting, whether you re left- or right-handed. 

The ebony handle is crafted from Shun s PakkaWood, a resin-treated hardwood, and then sanded and buffed to a smooth, glossy finish for moisture resistance and superior durability. Shun cutlery should be hand-washed for best edge retention.
