The Shun Classic 7.5" Sumo Santoku starts as an exceptionally hard core of VG10 steel, crafted using traditional Japanese knife-making techniques. With a traditional Japanese Chef s knife style, this fine blade is longer and 30% wider than a traditional Santoku knife, delivering the heft and length needed for thicker and larger foods. This wide blade is best for chopping, mincing, slicing and dicing foods of all kinds, including fish, meats and vegetables, in addition to scooping up chopped food for transfer to plate, pots, and pans.
The blade s strong core is supported on each side by sixteen layers of Damascus cladding. Formed utilizing the Kasumi method of making blades, the results allow the blade to glide more readily through foods, and creates an eye-catching, rippled pattern across the blade known as suminigashi or ink pattern. The blade offers exceptional edge retention and sublime performance, as well as ultimate strength and balance, with full tang and a razor-sharp edge.
The ebony PakkaWood handle is comprised of resin-treated hardwood, and shaped into an ingenious D-shape that fits naturally and securely in your palm. The handle is sanded and buffed to a smooth, glossy finish for a refined, modern appearance that offers superior durability and moisture resistance. For best results, hand wash the Shun Classic Sumo Santoku.
