With its long, wide 10-inch blade, this versatile knife deftly manages all the sizable chopping, slicing, dicing and mincing tasks that are too large for the 8-inch version of this knife. Use this fine blade with nearly any kind of food, fruits, vegetables, and meats. The Shun Ken Onion 10 Chef s Knife offers a belly that curves slightly deeper than a typical chef s knife, affording maximum glide and easy rocking motion for fine mincing of herbs and garlic. 

With a strong VG10 steel core supported by sixteen layers of SUS410/SUS431 stainless steel on each side, the Shun Ken Onion 10 Chef s Knife features a full thirty-two layers of Damascus cladding. Using the Kasumi method of knife-making, the process results in a blade that slices and glides more easily through foods, and also leaves a mesmerizing rippled effect along the blade known in Japanese as suminigashi or ink pattern. This blade is razor-sharp with extraordinary edge retention, and has a full tang for remarkable strength and balance. 

The Shun Ken Onion line features several design innovations for reduced strain and optimized control while working. The bolster angles to extend along the back of the spine, and the handle s curve that matches the arc of your palm. These uncommon ergonomics and stunning beauty harmonize to encourage a professional pinch grip while cutting, whether used left- or right-handed. 

Made from Shun s PakkaWood, a resin-treated hardwood, the ebony handle is sanded and buffed to a smooth, glossy finish for superior moisture resistance and durability. For best edge retention, hand wash Shun cutlery.
