This knife sharpener offers two stages for ultimate sharpening, both a coarse and fine rod are part of the sharpener. The stage 1 feature of the Ikon sharpener is a diamond rod for sharpening the dull edge of a straight knife blade. Stage 2 is a fine sharpener made of a ceramic rod for regular honing of the edge, or to finish the edge after using the diamond stage 1.
For sharpening serrated knives, only use the ceramic stage 2 and apply pressure lightly when drawing the knife through the stage 2 opening.
To use the Wusthof Classic Ikon Knife Sharpener, insert the end of the knife blade between the diamond or ceramic rods. Hold the knife straight and pull it through the rod slot from heel to tip. Apply light pressure to the knife and repeat this process until the knife is sharp. For sharpening scissors, place the blade into the center slot and push the scissors from tip to handle, repeating the process until the scissors are sharp.
It is important to always rest your Wusthof Classic Ikon Knife Sharpener on a flat, sturdy surface. The handle on the sharpener may be used for stability and additional control while sharpening your Wusthof knives. To clean your sharpener, which should always occur after use before dry storage, wipe with a damp cloth. Never rinse the sharpener in water.
