The Wüsthof Ceramic Whetstone is the ultimate solution for keeping your knives sharp, offering course and fine grains and housed in an attractive wooden storage box. The coarse, gray side offers 240 grit grain to be used for removing flaws and dents from your blades, while the fine, pale green side provides 800 grit for honing to your preferred sharpness. At 6 inches long by 2 inches wide, this whetstone can accommodate sharpening longer blades. For Japanese style grit, this whetstone offers J400 on one side, and J2000 on the other side.
Before each use, soak in water for 10 minutes to remove any metal dust. Position the stone on a flat surface and keep it stable. For very dull or damaged blades, start with the coarse side first. Using gentle pressure, draw the edge of the blade over the stone at a 15˚ - 20˚ angle from the blade’s base to tip, and repeat this motion for the other side of the blade. Repeat using the other side of the whetstone to hone the edge as desired. Knives that are well maintained may only require fine honing. Utilizing the stone’s entire surface while sharpening will make sure the stone wears evenly over time.
The Wüsthof Ceramic Whetstone is suitable for use with oil or water, but please note that once oil has been used, the whetstone can no longer be used with water. The Wüsthof Whetstone is approximately 1 inch thick, and easily stored within the included wood storage box.
